Ingredients for a 2 person serving:

  • 1 tbsp of olive oil
  • 1 medium sized onion
  • 1/2 tsp of salt
  • 1/4 pound of ground beef
  • 1 tsp Trader Joe taco's (TJs) mix (or chili powder)
  • 1 bell pepper
  • 1 15oz can of (TJs) tomato sauce
  • 1 tsp of "better than bouillon" or equivalent
  • 1/2 cup of water
  • 1 15oz can of (TJs) kidney beans
  • 1 15oz can of (TJs) Black beans
  • 1 tsp of apple vigar (optional)
Stirring the pot

Steps:

  • Dice the onion and saute with the olive oil in the pan on a medium heat
  • Add the salt
  • When onions are ready add the ground beef.
  • Break up the ground beef into little pieces
  • Add the taco mix / chili powder
  • Chop the bell pepper
  • Add bell pepper when the ground beef has browned.
  • Saute for 5 mins
  • Stir tomato sauce into the pan
  • Boil the water and pour it in the now empty tomato sauce can
  • Stir the bouillon into the boiling water
  • Once bouillon is dissolved, empty the tomato sauce can into the pan
  • Dump the 2 bean cans into a sieve and rinse the beans
  • Add the bean when the tomato sauce is boiling
  • Once the chili is boiling, let simmer for 30-45 mins, stir occasionally.
  • You can enhance the flavor with a 1/2 tsp of apple vinegar.
